RECIPE | HOMEMADE GRANOLA

Thursday, 19 January 2017

It's been a while, but I finally had some time to take some photographs for a new recipe!
I used to eat porridge all the time as breakfast, however, doing that for 2 years had gotten pretty boring, so I've been hunting down the internet/books for some new breakfast ideas. I was never a massive granola/cereal eater, mostly because I found that the ones you buy at the grocery store were always waaay to sweet (and pretty unhealthy too). Luckily I came up with this granola recipe, and let me tell you: it tastes divine! Even my family is obsessed!

It's incredibly easy to make and it only takes like 30min. And the good thing about it is that it'll last you for a couple weeks if you keep it in an airtight container! (If you haven't eaten all of it at least by the end of the week like me :-))
What you'll need:
- 2 cups of oats
- 1 cup of almonds
- 1 cup of walnuts
- 1/2 cup of mixed seeds
- 1/4 to 1/2 cup of dark chocolate
- 1 cup of goji berries
- 1/2 cup of honey
- 1/4 cup of coconut oil.
What you'll need to do:
  1. Preheat your oven to 175degrees celcius.
  2. Cut up the almonds and walnuts in smaller bits. It's all up to whatever you prefer whether that'll be bigger chunks or small bits.
  3. In a large bowl, mix the oats, almonds, walnuts and mixed seeds all together. Do not add the goji berries and chocolate yet!!!!
  4. Melt the coconut oil, then mix it in the large bowl together with the honey. Stir well until you've got a sticky mixture of oats/nuts.
  5. Pour it all into a baking tray. Pat down so it's evenly spread, and leave it in the oven for 20min. Do not forget to turn your mixture around halfway through.
  6. While the granola is in the oven, it's time to cut up the dark chocolate. You can do this either by using a knife, or by using a rasp. Again, it's up to you whether you prefer bigger chunks or smaller bits.
  7. When the 20 minutes are over, it's time to get your granola out of the oven. Do not worry if it still looks a bit sticky, it'll all dry up once it's cooling down.
  8. Once it's all cooled down, it's time to add the goji berries and the dark chocolate. Put it all into an airtight container, and it's all done!
And that's it! I told you it would be super-duper easy! Serve it with yoghurt or milk and you've got yourself a delicious healthy breakfast. (You can even use it on a smoothie bowl if you'd like!)
