RECIPE | HEALTHY CHOCOLATE CHIP MUFFINS.

Hey! I've got this amazing recipe for you guys today! It's for healthy chocolate chip muffins, but trust me - they still taste like a proper unhealthy muffin! They're incredibly easy to make and I haven't come across a single person who doesn't like these whenever I've made them. I'm also definitely planning on making these with the girls while they're on their midterm. So click on 'continue reading'  to find out how to actually make these!

Ingredients ( for 10 muffins ):
- 200gr of almond flour
- 4 eggs
- 1/2 chocolate bar that's at least 80% cacao
- 2 marrows of vanilla pod
- 4tbsp honey
- 2 tspn baking powder
- 3 tbsp melted cocosoil

Method:
1) Preheat your oven to 175 degrees Celsius.
2) mix the almond flour, baking powder and de marrow of the vanilla pods in a bowl.
3) stir the melted cocosoil with the honey in a separate bowl and add it to the flour mixture,  and stir.
4) break 1/2 of your pure chocolate bar into tiny pieces, leave them aside for a bit.
5) whip the eggs with a food processor or handmixer until creamy. Now put both mixtures together and whisk with the food processor until it has a creamy texture.
6) add in your chocolate bits, mix all together with a spoon instead of a food processor otherwise the chocolate bits will disappear into nothing.
7) put the mixture into 10 cupcake forms and place them in the oven for +/- 25minutes, until they look golden brown. However, keep a good eye on them because they burn easily!
