Ok, let's start of by saying that I'm hands down the worst at coming up with names for my titles and recipes. I mean 'green salad recipe' doesn't sound so exciting does it?! But, guess what?! The salad actually is exciting because it's DE-LIC-IOUS!.
This salad is definitely my favorite salad to eat before work since it's just so easy and quick to prepare. And ok, this salad may look a lot like the last salad recipe I posted here, but it's different! I also think that this is such a great base for any kind of salad, so you can spice it up to exactly what you'd like!

So, what you'll need (for 1 serving)
1 cup of quinoa
1,5 hands of spinach
1/4 of a cucumber
8 cherry tomatoes
1 paprika
broccoli ( add as much as you like!)
goji berries (optional)
any kind of meat of your choice ( I used small meatballs since we had some left but you can also use chicken!)

How to make it: 
1) start by slowly cooking your quinoa. (When using 1 cup of quinoa, you need to add 2 cups of water.) 2) While you're quinoa is cooking. Start with seasoning your meatballs. You can season them however you'd like. (I'd suggest using freshly made meatballs without any additions) After the seasoning you can start cooking, good looking ;-) 3) Now it's time to put the spinach in a bowl and cut up all your veggies, so you can add those to the bowl as well! 4) don't forget to turn around your meatballs from time to time, and stirr your quinoa! 5) Start by cooking your brocoli in a pan untill it's done. Make sure to check on it from time to time because we don't want it to get soggy! 6) Add the feta ( just add as much as you like) and the goji berries! 7) When the meatballs, quinoa and brocoli are done, you can add those ├ęt voila, your salad will be ready to eat!

Like I said before, this is also just the perfect base to any kind of salad to me! Just leave the meatballs + brocoli (and maybe even the quinoa) out and you'll be able to go so many ways with this! For example, you're able to replace the meatballs with chicken and the quinoa with brown rice. Or you could even replace the quinoa with noodles!
